Ingredients
For caramel syrup:
- 1 cup of sugar
- 1/2 cup of hot water
- 1 pineapple cut in rings
For cake:
- 1 can of condensed milk
- 2 cups of sugar
- 2 cups coconut milk
- 4 cups wheat flour
- 2 tablespoons of baking powder
- 2 sticks of butter (about 9 ounces)
- 6 eggs
Directions
Step 1: Caramel Syrup
- Put the sugar in a pan on medium heat, and mix it until completely melted
- Change to low heat, and slowly start adding water and continue mixing
- Once it reaches appearance of caramel syrup, put the mixture on a cake pan and add the pineapple rings on top of it –covering the bottom
- Add baking spray on the cake pan side
Step 2: Pineapple Cake
- Beat the egg white until fluffy, and leave it at rest for later
- Beat the yoke with the sugar and condensed milk
- In small amounts, start adding the coconut milk, alternating with the wheat flour
- Once the coconut and wheat flour are all mixed, then add the baking powder
- Add the reserved egg white from Step 1
- Take the mixture to a pre-heated oven at 350 F for about 40 to 45 minutes
- To make sure the cake is ready, stick a toothpick in the middle of it. If it’s coming out clean, the cake is done. Otherwise, wait a little bit more.
